

Introduction
Tender cubes of spiced apple wrapped in crispy kataifi strands, baked until golden and served with a luscious caramel sauce—this dessert is all about texture and warmth. It’s ideal for cozy evenings or as a charming finish to a Mediterranean-inspired meal.
Ingredients
Makes approximately 10 rolls
For the rolls:

375 g Sweetifi Kataifi pastry (room temperature)

250 g unsalted butter, melted and clarified
For the apple filling:

25 g unsalted butter

4 Granny Smith apples, peeled, cored and cut into small cubes

2 tbsp brown sugar

1 tsp ground cinnamon
-
1 tsp cornflour (cornstarch)
For the warm caramel sauce:

300 g brown sugar
-
75 g butter
-
300 ml thickened cream
To serve:

Finely chopped pistachio nuts

Method

Pre-heat the oven to 180 °C (fan-forced). Grease a baking dish with butter.

Make the apple filling: In a saucepan over medium heat melt the butter. Add the apple cubes and stir. Mix in the brown sugar and cinnamon, then cover and cook for about 10 minutes, stirring occasionally. After cooking, stir in the cornflour. Allow the mixture to cool completely.

Prepare the kataifi strands: Remove the kataifi from its packet and bring it to room temperature in its packaging. Cut lengths of about 20 cm using scissors or a knife, and gently pull the strands apart so they loosen but retain length.

Place approx. 25 g of kataifi on your work surface (about 12 cm wide). Layer another small piece of kataifi across the width for extra thickness where the apple filling will go. Drizzle with melted butter.

Spoon one heaped tablespoon of the cooled apple filling across the double-layered kataifi, then roll up gently, tucking the ends in to seal. Brush each roll with melted butter and roll the cylinder on the work surface to tighten it. Place the roll into the greased baking dish. Repeat with remaining kataifi and apple filling, leaving space between each roll for even baking. Brush any remaining butter over the rolls.

Bake for about 40 minutes, or until each roll is golden and crisp.

Make the caramel sauce: While the rolls bake or just after removing them, in a saucepan combine the brown sugar, butter and cream. Bring to boil, stir until sugar dissolves, then simmer for about 8-10 minutes until the sauce slightly thickens. Remove from heat.

Once the rolls are baked, serve them warm with the warm caramel sauce poured over or on the side. Sprinkle chopped pistachios and add a scoop of vanilla ice-cream for extra indulgence.
💡 Sweetifi Tip
For a little extra crunch and colour, you can add a light sprinkle of finely chopped toasted walnuts alongside pistachios just before serving.

Serve these rolls fresh from the oven while still warm so the contrast of crisp pastry, soft apple and warm caramel hits just right. They work beautifully with a strong coffee, a spiced chai or a simple glass of milk for a comforting finish.
